Ingredients :

1. One cup of basmati rice
2. One cup of mixed veggies (beans, peas, carrots, etc.)
3. One onion, diced finely
4. Chopped tomato, one
5. One chopped green chili
6. Mixture of ginger and garlic – 1 tablespoon
7. One teaspoon of cumin seeds
9. One inch cinnamon stick; 10. Three to four cloves
11. Pods of cardamom, 2-3
12. A teaspoon and half of turmeric powder
13. One teaspoon of garam masala.
14. A couple cashews
15. As a garnish, fresh coriander leaves
16. Two teaspoons of ghee or oil
17. To taste, add salt

Instructions :

1. After giving the basmati rice a thorough rinse, let it soak in water for half an hour. After emptying the water, set it aside.

2. In a big skillet or pot, heat the oil or ghee. Incorporate the cardamom pods, cloves, cinnamon stick, cumin seeds, and bay leaves. Cook until the flavor of the spices comes through.

3. Include the green chiles and chopped onions. Onions should be sautéed till golden brown.

4. Add the ginger-garlic paste and stir. Cook for one minute, or until the raw scent goes away.

5. Add the diced tomatoes and heat until they soften and the oil begins to separate.

6. Add the mixed veggies and cook, stirring, for a few minutes, until the vegetables are just starting to get tender but not soft.

7. Add salt, garam masala, and turmeric powder. Toss to evenly distribute the spices over the vegetables.

8. Now fill the pot with the drained and soaked basmati rice. Toss the rice and veggies together gently.

9. In the pot, add water to the rice in a 2:1 ratio (two cups water to one cup rice). After bringing it to a boil, lower the heat to a simmer, cover the pot, and let the rice cook until it is tender and the water has been absorbed.

10. Toast the cashews until they become golden brown in a different pan. They go into the pulao.

11. Use a fork to fluff the cooked rice in the pulao. Sprinkle some fresh coriander leaves on top.

12. Warm veg pulao accompanied by your preferred side dish or raita tastes great.
